HACCP CONCEPT DISCUSSED: PROPER HAND WASHING PROCEDURES SHALL BE ENFORCE. SECTION 750.512 WAS REVIEWED.
OBSERVED THE "NORLAKE" WALK-IN COOLER TO BE MALFUNCTIONING. ACCORDING TO PAULA VALADEZ, THE COOLER WAS FIRST NOTICED TO BE MALFUNCTIONING AROUND 11 AM. ALL POTENTIALLY HAZARDOUS FOODS WERE THROWN AWAY; THESE FOOD ITEMS INCLUDE: (1) A BOTTLE OF RANCH, (2) MAYONNAISE, (3) CHICKEN SOUP [120 OZ], (4) A BAG OF COOKED POTATOES, (5) A CONTAINER OF CUT GREENS (6) SOUR CREAM [40 LBS], (7) A CONTAINER OF FLAN, (8) 180 EGGS, (9) BLUE CHEESE [.25 LBS], (10) A SMALL CONTAINER OF MAYONNAISE [.25 LBS], (11) MILK [.5 GALLON].
A FOLLOW-UP WILL BE CONDUCTED ON JUNE 6, 2017 TO ENSURE ITEM 35 HAS BEEN CORRECTED.
RECOMMENDATION: TURN DOWN TEMPERATURE OF THE COOLER LOCATED NEXT TO THE BAR.
